Vegan Chocolate Mousse Cups
As the holidays roll around each year I am always coming up with new dessert recipes for my family and friends holiday get-togethers, this year is no different. I like to think out of the box and not stick to the usual calorie ridden desserts. This year I decided to make Vegan Chocolate Mousse Cups and boy am I glad I did, I mean who doesn’t love chocolate without a billion added calories!? I decided to do a test run on a few family members and friends during Diwali beforehand and they were a HIT! I made them Vegan because I wanted them to be eggless for a few family members yet still taste amazing and that’s exactly what I achieved! Happy Holidays! Hope you guys enjoy and be sure to tag #themommyspice on IG so that I can share your creations!
Spicy Southwestern Corn Salad
I love making this Spicy Southwestern Corn Salad all year round, it makes enough to feed plenty of people, which is always a plus and it can make a great side dish or appetizer if served with chips. If I’m feeling like something heavier then I just add cheese and melt it all up in the microwave! Itโs also great to put on tacos, quesadillas, or in enchiladas! I love it so much I add it to my mac and cheese sometimes(just omit the avocado) Super versatile and yummy! For those that like it spicy just add more jalapenos or habaneros as I do! Enjoy!
Healthy Chicken Lettuce Wraps
I have been making these delicious and healthy chicken lettuce wraps for a couple of years now and my family absolutely loves them! I love the fact that they take less than 30 minutes to put on the table too! Make this recipe yours by adding or omitting ingredients to your liking. I have previously made these with tofu, ground turkey, pork and beef, choose whichever protein you like! I’ve eaten these at PF Chang’s and other Oriental restaurants but I wanted to come up with a recipe and put my own twist on it so here you have it. Enjoy!
Fool-Proof Khaman Dhokla
Khaman dhokla is a dish I make weekly at home without fail. For those of you who aren’t familiar with this dish it’s basically a savory steamed chickpea flour sponge cake tempered with spices. My whole family loves khaman so much so that I find myself having to make 6+ trays of them every time we have a family dinner or get together.ย In fact, every single time I visit my mom I make a whole batch because she absolutely loves my khaman and my mother is no easy critic to please! It’s super easy to make and the recipe I have come up with is practically fool-proof! You can even make it in the microwave to save time and clean up. Do try it and let me know what you think!
Soya Chunks Biryani
Lately, I have been posting a lot of meat dishes so today I decided that I would post a vegetarian recipe that will keep you coming back for more! My Soya Chunks Biryani is perfect for a weeknight dinner and if you do not want the soya chunks in the dish can be made without
Mexican Street Style Chicken Tacos
I’m so happy I got this post up just in time for Cinco De Mayo! If you follow me on social media, you know my love for Tacos runs DEEP! So much so that I make Mexican Style Street Tacos once a week for my family, no matter what! Eating these tacos always take me back to vacations in Mexico, walking the streets and finding stall after stall selling these amazing tacos! No advertising needed, I mean the smells just waft you towards them! I serve mine with Homemade Mexican Rice and Beans (authentic and super easy recipe coming soon). Go crazy and add any toppings you like, but onion, cilantro, and lime are authentic. You won’t find lettuce and cheese in your tacos when in Mexico! Enjoy Guys!
Sweet and Spicy Gujarati Kadhi
ย
Kadhi can be compared to a creamy, tangy, and spicy soup if you will. I have always looked at kadhi as comfort food. In India Kadhi comes in many variations, Punjabi Kadhi has Pakora(dumplings) in it and Sindhi Kadhi is sort of similar to Sambhar or Dal.ย I remember the first time I had Punjabi Kadhi, I found it quite weird that there was “bhaajiya”(pakora) in my Kadhi. I have since fallen in love with my husband’s Punjabi Kadhi,ย although the recipe below will always be my first choice compared to any other kadhi EVER! This particular recipe is for Gujarati Kadhi, just like my mama makes! In my family, we enjoy eating kadhi with a steaming helping of Basmati Rice or Khichdi. You can drink it as soup, eat it with roti or serve it over rice or khichdi, completely your choice!
Greek Lemon Chicken Kabob with Garlic Yogurt Sauce
I’ve been yearning to share this recipe for a while now and I am just now getting to it! Better late than never right? These Greek Kabobs are quick, easy to make and super healthy! Seriously! What more could you ask for in a dish right? Kabobs of different variations are on rotation every two weeks or so in my household. If you don’t have lemons on hand, use limes! I have used both and the dish turns out great either way! You could place the skewers over a salad or in a pita pocket for a quick lunch or light dinner. I placed them on a bed of couscous this time but they also taste great with Naan or Lavash, the options are truly endless! The yogurt sauce is one I make and bottle up for my friends and family because they cannot get enough, we enjoy spice so I blend jalapeno into it as well! Be sure to check it out and let me know what you think!
Zesty Masala Rice
When my husband and I are in the mood for something quick and delicious, this Zesty Masala Rice is on top of our list. I’m a sucker for vegetables and rice so whats better than spicing it up a bit? It’s a quick dish that will leave your tastebuds crying out for more. Try it out for yourselves and see what I’m talking about!
