Greek Lemon Chicken Kabob with Garlic Yogurt Sauce

I’ve been yearning to share this recipe for a while now and I am just now getting to it! Better late than never right? These Greek Kabobs are quick, easy to make and super healthy! Seriously! What more could you ask for in a dish right? Kabobs of different variations are on rotation every two weeks or so in my household. If you don’t have lemons on hand, use limes! I have used both and the dish turns out great either way! You could place the skewers over a salad or in a pita pocket for a quick lunch or light dinner. I placed them on a bed of couscous this time but they also taste great with Naan or Lavash, the options are truly endless! The yogurt sauce is one I make and bottle up for my friends and family because they cannot get enough, we enjoy spice so I blend jalapeno into it as well! Greek Lemon Chicken Kabobs with Garlic Yogurt Sauce

Ingredients
  

Skewers

  • ¼ cup Greek Yogurt
  • 1 tsp Greek Oregano -Italian Oregano can be substituted but Greek is ideal.
  • 1 tsp Garlic Powder
  • 1 Jalapeno -Finely Diced(OPTIONAL)
  • 1 tsp Greek Seasoning -Optional but I use it every single time I make this dish.
  • 1/2 tsp Cayenne Pepper -Add more if you like it spicy like I do!
  • 1/2 tsp Sumac (Optional)
  • Zest and juice of 1 lemon -You can substitute lime if you need to! I have in the past and it still tasted great!
  • lbs Boneless Skinless Chicken Breasts Cut into cubes of even size to ensure even cooking.
  • 1-2 tbsp EVOO (Eyeball It)
  • Salt and freshly ground black pepper
  • ¼ cup Chopped Fresh Parsley

Garlic-yogurt sauce

  • 1 cup Greek yogurt
  • 2 to 3 Cloves Garlic -Finely Minced
  • 1/2 tsp White Pepper
  • 1/2 teaspoon Salt
  • 1 tbsp Lemon Juice
  • 2 tbsp EVOO
  • 1/4 tsp Sumac
  • 1 Jalapeno -Diced (Optional)

Instructions

  • In a small bowl, whisk the yogurt with the lemon zest, lemon juice, Greek Oregano, EVOO, garlic powder, SumacGreek Seasoning, cayenne, and jalapeno.
  • In a separate bowl, coat the chicken with the yogurt-lemon mixture(above) and massage the chicken a bit ensuring each piece is fully coated with the marinade.
  • Place the chicken in the fridge for 2 hours or overnight.
  • Place one piece of chicken on each skewer and continue until you have about 4-5 cubes on each stick depending on the size of your cubes.
  • Brush the skewers on both sides with olive oil and then season with salt and pepper. Working in batches, cook on a preheated grill or grill pan until nicely charred on both sides, 4 to 5 minutes per side.
  • Serve immediately, garnish with parsley and serve alongside garlic yogurt sauce (recipe above). I served mine on a bed of couscous drizzled with the yogurt sauce (thinned out with a little water)
