Loaded Vegetarian Nachos

You will never miss the meat in these nachos! I loaded them up with my special refried beans as well as black beans and other veggies, oh and of course CHEESE! Perfect for one or a crowd! The last time I made these I had to make 4 trays and still had to make extra upon request! Hope you enjoy it!

Loaded Vegetarian Nachos

Ingredients
  

Ingredients:

  • 5-6 cups Tortilla Chips I use Tostitos
  • 1 1/2 cups Shredded Monterey Jack Cheese I use Cabot Brand and then shredded it at home
  • 1/2 Cup Shredded Sharp Chedder or Pepper Jack Cheese Cabot Brand shredded at home.
  • 1 Diced Tomato
  • 1 15 oz Can Rinsed Black Beans I use Goya Brand
  • 1/2 cup Canned Corn Optional
  • 1/4 cup Thinly Sliced Jalapenos or Picked Jalapenos
  • 1/3 Cup Finely Chopped Cilantro For Garnish
  • 1 Cup Store Bought Salsa I use Mrs. Renfros Ghost Pepper Salsa
  • 1 cup Nacho Cheese Optional but if you're feeling cheesy' go for it! I used Tostitos Brand.

My Special Refried Beans

  • 1 15 oz Can Refried Beans I use Taco Bell or Old El Paso
  • 1 Cup Enchilada Sauce I use Old El Paso
  • 1/2 Tbsp Adobo or Taco Seasoning I use Goya OPTIONAL and Taco Bell Taco Seasoning
  • 1/2 Tbsp Sazon I use Goya Achiote y Culantro
  • 1/2 Cup Taco Bell Hot Sauce Optional- They come in bottles and can be found at most Walmart Locations. I always taste the dish first before adding to avoid over salting.

Instructions
 

Directions:

    Refried Beans

    • Warm up the refried beans in a microwave for 1-2 minutes, cover to avoid splatter when warming.
    • Be careful and taste as you go because the beans, seasoning and sauces all contain salt!!
    • Add all of the remaining ingredients for my special refried beans to the warmed beans and stir till it has reached a smooth consistency. You can add as little or a lot of the enchilada and hot sauce depending on how you want your refried beans.
    • Preheat oven to 350 degrees Fahrenheit. Place a piece of parchment paper on a baking sheet.
    • Spread tortilla chips onto parchment paper. Top with refried bean mixture, salsa, black beans, tomato, corn, cheese and jalapenos (exactly in that order). Make sure  you spread everything apart to top each tortilla chip.
    • Place into oven and bake until cheese has melted, about 10 minutes.
    • Serve immediately, garnished with cilantro, sour cream and jalapenos, if desired.

    Notes

    Feel free to add diced bell pepper or any other veggies you desire. You can easily make this non vegetarian by adding shredded rotisserie chicken!
