Sweet and Spicy Gujarati Kadhi

Sweet and Spicy Gujarati Kadhi

Β

Kadhi can be compared to a creamy, tangy, and spicy soup if you will. I have always looked at kadhi as comfort food. In India Kadhi comes in many variations, Punjabi Kadhi has Pakora(dumplings) in it and Sindhi Kadhi is sort of similar to Sambhar or Dal.Β  I remember the first time I had Punjabi Kadhi, I found it quite weird that there was “bhaajiya”(pakora) in my Kadhi. I have since fallen in love with my husband’s Punjabi Kadhi,Β  although the recipe below will always be my first choice compared to any other kadhi EVER! This particular recipe is for Gujarati Kadhi, just like my mama makes! In my family, we enjoy eating kadhi with a steaming helping of Basmati Rice or Khichdi. You can drink it as soup, eat it with roti or serve it over rice or khichdi, completely your choice!

Greek Lemon Chicken Kabob with Garlic Yogurt Sauce

Greek Lemon Chicken Kabob with Garlic Yogurt Sauce

I’ve been yearning to share this recipe for a while now and I am just now getting to it! Better late than never right? These Greek Kabobs are quick, easy to make and super healthy! Seriously! What more could you ask for in a dish right? Kabobs of different variations are on rotation every two weeks or so in my household. If you don’t have lemons on hand, use limes! I have used both and the dish turns out great either way! You could place the skewers over a salad or in a pita pocket for a quick lunch or light dinner. I placed them on a bed of couscous this time but they also taste great with Naan or Lavash, the options are truly endless! The yogurt sauce is one I make and bottle up for my friends and family because they cannot get enough, we enjoy spice so I blend jalapeno into it as well! Be sure to check it out and let me know what you think!

Zesty Masala Rice

Zesty Masala Rice

When my husband and I are in the mood for something quick and delicious, this Zesty Masala Rice is on top of our list. I’m a sucker for vegetables and rice so whats better than spicing it up a bit? It’s a quick dish that will leave your tastebuds crying out for more. Try it out for yourselves and see what I’m talking about!

chickpea curry

Authentic Punjabi Chole

I grew up eating amazing Gujarati food cooked by my mother. It was only until I was older that I was introduced to Punjabi food and that was usually at a restaurant. Punjabi food has literally taken over almost every single Indian restaurant menu! I married into a Punjabi family and needless to say the food is OUT OF THIS WORLD! Oh and not having to go out to a restaurant to eat it is a major plus. Did you know that real authentic chole will always be a dark color as opposed to a red tinged curry? Look out for the imposters! Thus far I have posted recipes for mostly non vegetarians but that’s all about to change. This Authentic Chole Recipe (Chickpea Curry) has been passed down for generations in my husbands family. I wish I could take credit for it but I cannot, it was all hubby who cooked this. My only addition was being his sous chef! I mean seriously what’s better for a relationship than a couple who cooks together? From my family to yours, we hope you enjoy this amazing chole recipe.

Tandoori Chicken Tzatziki Pita Pockets

Tandoori Chicken Tzatziki Pita Pockets

These Tandoori Chicken Tzatziki Pita Pockets are perfect for a quick weeknight meal or even lunch. I often whip these up ahead of time and assemble them at the last minute when I’m in a hurry. The Tzatziki will stay fresh in the fridge (in an airtight sealed container) for upwards of one week although in my house it’s usually gone in a few days. Grill a batch of the tandoori chicken a few days ahead, and it can re-purposed for other dishes as well as this one. Make-ahead dishes are my favorite, time is very precious and unpredictable due to the baby, therefore make-ahead meals are definitely a lifesaver when those hunger pangs hit. I find that the Tandoori Chicken and Tzatziki complement each other very well, the cucumber and onion garnish gives the dish a welcome freshness and sumac closes the dish out with a much-needed zing! Fusion food is amazing when it works so well together, just like Indian Chinese and in this case Indian Greek. I hope you guys enjoy it!

Summer rolls are healthy and delicious! The taste is light, refreshing, and absolutely pleasing to the palate. Making Summer Rolls are a lot easier than you think, and you can get the ingredients easily at Asian stores, and at some regular supermarkets, in the International food aisle. Summer rolls in my household do not last long as everyone eats them up within minutes of me making them SCORE! I hope you enjoy them as much as my family does!

Instant Pot Kheema Mattar Veg & Non-Veg Version

This Instant Pot Kheema will be a hit in your household! These days Instant Pot is all the rage! It is so versatile and handy when you’re busy and always on the go. My Instant Pot is a lifesaver. Baby J requires or rather cries for my attention ALL THE TIME these days, luckily Instant Pot takes the hassle out of having to babysit a meal on the stove. I have made this recipe for years on my stovetop and recently started to make it in my IP. I guarantee it will come out exactly the same if not better in the IP!
