Kheema Egg Rolls are crispy egg rolls filled with spiced ground/minced meat, onions, and cilantro. I usually make around 50-60 and freeze most of them for quick snacks and/or appetizers/meals. Spicy Southwestern Corn Salad
I love making this Spicy Southwestern Corn Salad all year round, it makes enough to feed plenty of people, which is always a plus and it can make a great side dish or appetizer if served with chips. If I’m feeling like something heavier then I just add cheese and melt it all up in the microwave! It’s also great to put on tacos, quesadillas, or in enchiladas! I love it so much I add it to my mac and cheese sometimes(just omit the avocado) Super versatile and yummy! For those that like it spicy just add more jalapenos or habaneros as I do! Enjoy!

I love the fact that they take less than 30 minutes to put on the table too! Make this recipe yours by adding or omitting ingredients to your liking. I have previously made these with tofu, ground turkey, pork and beef, choose whichever protein you like!
