Spicy Mexican Breakfast Sandwich

Spicy Mexican Breakfast Sandwiches are on my mind! I’m tired of the same breakfast day after day and I think you guys must be as well!ย  Well– you can spice things up by making my go-to Spicy Mexican Breakfast Sandwich! You can add bacon, spinach, sausage, or leave it as it is– it’s delicious either way!ย  Kaiser Rolls as they hold up better but you can use English Muffins or even regular sandwich bread. I always top my sandwich off with my favorite habanero hot sauce from El Yucateco or Yellowbird Sauce!ย  make it a fusion dish by adding my Indian Spiced Hashbrowns as an accompaniment. Spicy Mexican Breakfast Sandwich

Spicy Mexican Breakfast Sandwich

Loaded with eggs, cheese, salsa and tons of flavor to keep you coming back for more!

Cook Time 10 minutes

Servings 4 people

Ingredients
  

  • 6 Large Eggs, Beaten Add 1-2 tsp of Heavy or Light Cream to your eggs to get them fluffier before you beat them.
  • 4 Mini Sweet Peppers Diced/Sliced
  • 1-2 Jalapenos Diced Used canned if you cannot find them fresh
  • 1 TBSP Goya Brand Adobo Seasoning The one with the red top!
  • 1 Medium Red Onion Finely Diced
  • 1/2 Cup Salsa of your choice Use one that you know and love, I use Mrs. Renfros or Chi Chi's
  • 3 Garlic Cloves Finely Chopped
  • 3 TBSP Chopped Fresh Cilantro For Garnish
  • Salt and Pepper to taste I usually have no need to add more salt as the adobo seasoning and salsa have enough of it to season the dish.
  • 2 TBSP Good Quality EVOO
  • Taco Cheese, Queso Fresco or Cheddar Cheese To top off your delicious sandwich!
  • 4 Kaiser Rolls Toast them with Butter while your eggs are cooking.

Instructions
 

  • Add Evoo to a saute pan on medium low heat.
  • Add in the red onions, garlic, peppers and jalapenos.
  • Add in the salsa and let the water from it evaporate a little
  • Add in the Adobo Seasoning- turn the heat to low.
  • Add in your beaten eggs and stir till you see the curds. Once you get the consistency you like take the eggs off the heat.
  • Place scrambled eggs on your toasted kaiser rolls and top with cheese.
  • Top with Cilantro and check for salt and pepper. Top with your favorite hot sauce and Enjoy!
