Instructions
Directions:
Refried Beans
Warm up the refried beans in a microwave for 1-2 minutes, cover to avoid splatter when warming.
Be careful and taste as you go because the beans, seasoning and sauces all contain salt!!
Add all of the remaining ingredients for my special refried beans to the warmed beans and stir till it has reached a smooth consistency. You can add as little or a lot of the enchilada and hot sauce depending on how you want your refried beans.
Preheat oven to 350 degrees Fahrenheit. Place a piece of parchment paper on a baking sheet.
Spread tortilla chips onto parchment paper. Top with refried bean mixture, salsa, black beans, tomato, corn, cheese and jalapenos (exactly in that order). Make sure you spread everything apart to top each tortilla chip.
Place into oven and bake until cheese has melted, about 10 minutes.
Serve immediately, garnished with cilantro, sour cream and jalapenos, if desired.
Notes
Feel free to add diced bell pepper or any other veggies you desire. You can easily make this non vegetarian by adding shredded rotisserie chicken!
