I have been making these delicious and healthy chicken lettuce wraps for a couple of years now and my family absolutely loves them! I love the fact that they take less than 30 minutes to put on the table too! Make this recipe yours by adding or omitting ingredients to your liking. I have previously made these with tofu, ground turkey, pork and beef, choose whichever protein you like! Iβve eaten these at PF Changβs and other Oriental restaurants but I wanted to come up with a recipe and put my own twist on it so here you have it. Enjoy!

Healthy Chicken Lettuce Wraps
Quick, easy, delicious and super healthy, what more could you want?
Ingredients
Ingredients:
- 1 Tablespoon Olive Oil Or Any Oil of your choice
- 1 Pound Chicken You can either use ground or cut breasts into tiny cubes
- 1 Yellow Onion Finely Diced
- 1/4 Cup Hoisin Sauce
- 3 Cloves Garlic Minced
- 1 Tablespoon Rice Wine Vinegar
- 2 Tablespoons Low-Sodium Soy Sauce
- 1 Tablespoon Freshly Grated Ginger
- 1 Tablespoon Chilli Oil OPTIONAL
- 1 Tablespoon Sriracha OPTIONAL
- 1 Medium Zucchini Diced
- 1/2 Cup Diced Celery
- 1/2 Cup Diced Carrots
- 5-Ounce can of Bamboo Shoots Slice thinly after draining
- 1 5-ounce can whole water chestnuts, drained and diced I use La Choy (See Picture)
- 2 Scallions/Green Onions Thinly Sliced for Garnishing
- 1 Head Butter/Bibb Lettuce or Romaine I used Romaine but I prefer Boston
- Salt to taste and freshly ground black pepper to taste
- Sesame Seeds OPTIONAL - Garnish
Instructions
Sauce
- Mix garlic, hoisin sauce, soy sauce, rice wine vinegar, ginger, sriracha and Chilli Oil in a bowl and set aside.
Directions:
- Heat olive oil in a saucepan over medium-high heat. Add chicken and cook until slightly browned, about 5 minutes, make sure to stir often to avoid sticking, drain excess fat.
- Add onions to the chicken mixture. Stir in sauce. Cook until onions have become translucent, about 1-2 minutes.
- Stir in water chestnuts, bamboo shoots, carrots, celery, and zucchini until tender, about 3-4 minutes; season with salt and pepper, to taste. Garnish with green onions/scallions and sesame seeds.
- To serve, spoon several tablespoons of the chicken mixture into the center of a lettuce leaf, taco-style.
