Spicy Southwestern Corn Salad

I love making this Spicy Southwestern Corn Salad all year round, it makes enough to feed plenty of people, which is always a plus and it can make a great side dish or appetizer if served with chips. If I’m feeling like something heavier then I just add cheese and melt it all up in the microwave! It’s also great to put on tacos, quesadillas, or in enchiladas! I love it so much I add it to my mac and cheese sometimes(just omit the avocado) Super versatile and yummy! For those that like it spicy just add more jalapenos or habaneros as I do! Enjoy!

Spicy Southwestern Corn Salsa

Ingredients
  

Ingredients:

  • 1 Can Corn fresh or frozen (thaw if frozen)
  • 1 Chopped Medium Tomato
  • 1 tbsp Olive Oil
  • 3 tbsp Minced Cilantro
  • 1 Chopped Scallion
  • 1 Can Black Beans
  • 2 tbsp Lime Juice adjust according to taste
  • 1/3 cup Chopped/Sliced Onion I prefer red
  • Salt and Fresh Pepper To Taste
  • 1 Avocado diced
  • 1 Diced Jalapeno or Habanero I always add more!
  • 1 tbsp Taco Seasoning Optional but I always add it!

Instructions
 

Charing The Corn

  • In a heavy bottom pan, I use lodge add a small amount of oil and char the corn for about 3-5 minutes. Do not let it blacken just slightly brown on the sides. Remove and follow the next steps.

Directions:

  • In a large bowl, combine beans, corn, tomato, onion, scallion, cilantro, salt and pepper.
  • Squeeze fresh lime juice to taste and stir in olive oil.
  • Marinate in the refrigerator 30 minutes.
  • Add avocado just before serving so it doesn't oxidize. Enjoy!

  1. This looks so good and so simple! I really love corn salsa, but I really love corn period. My daughter would LOVE this with a little bit of meat mixed in, she loves spicy foods!
