What is Cinco De Mayo?
Cinco de Mayo commemorates a Mexican military victory over French forces in 1862, however, it’s not as widely celebrated in Mexico as it is in the United States. It’s a holiday known for yummy libations, mariachi music, vivid colors, and of course, food!

Most of our usual spots for celebrating Cinco de Mayo are only offering take out and delivery so we need to get a little creative this year. One brand is making it easy for us to have in-home fiestas! The makers of CHI-CHI’S® products, the nation’s celebration-focused salsa, tortilla and chip brand, is partnering with the Mariachi Heritage Foundation to make the day special. Tune in to a live, virtual happy hour on YouTube with mariachi band members to celebrate “Singo de Mayo” this Tuesday, May 5 from 6-7 p.m. CT. Up to 200 fans across the country will be serenaded with classical mariachi music you’ll want to dance to!

Let’s Talk About Tacos!
As promised, I am sharing my easy taco recipe with you using my favorite CHI-CHI’S ® Thick ‘n Chunky Medium and Mild Salsa. These are an easy and delicious way to add excitement to Cinco de Mayo recipes with a flavorful bite of heat – a party in your mouth with every bite! You can’t celebrate “Sing de Mayo” without amazing food, right?!
Healthy Chicken Tacos
Ingredients
Chicken Marinade
- 3 Medium Cloves Garlic
- 1/4 Cup Chopped Red Onion
- 2 Cups Chopped Fresh Cilantro
- 3 Jalapenos Chopped
- 1/2 Cup Light Mayo
- 2 Tablespoons CHI-CHI’S ® Thick ‘n Chunky Medium Salsa or Mild Salsa
- 1.5 Tablespoons White Vinegar
- 2 Teaspoons Gulden's Mustard
- 1/2 Teaspoon Kosher Salt
- 1/4 Teaspoon Freshly Ground Black Pepper
- 2 Tablespoons Extra Virgin Olive Oil
Other Ingredient
- 2 Boneless Skinless Chicken Breasts
- Lettuce Cups I used Romaine but you can also use Bibb/Boston
Instructions
Making the Marinade
- Saute the onion in a small skillet with 1 teaspoon of the oil until soft, 3 to 4 minutes.
- Transfer to the blender then add the remaining oil, mayo, vinegar, salsa, mustard, salt and pepper.
- Then add the chopped jalapeno, cilantro and garlic and blend on high speed until the sauce is smooth and creamy, about 30 seconds.
- Once fully blended marinate both of your chicken breasts with half of the sauce and use the rest for a taco topping. Ideally I marinate my chicken overnight but if you are crunched for time 3-4 hours is sufficient enough.
- Once marinated let the meat come to room temperature.
- Heat a skillet- I use Lodge Cast Iron on medium heat.
- Add EVOO to the pan and cook the chicken breasts until they are cooked through.
- Let your chicken rest for 10 minutes and then slice.
- Place chicken strips in lettuce cups and top with your favorite cheese, cilantro, jalapenos, onions, Chi Chi's salsa and reserved sauce that we made earlier.
- Enjoy!
