Marinate vegetables and soya chunks in yogurt along with all the dry spices.
In a Pressure cooker or Instant Pot heat up 2tbsp ghee and add in cinnamon, cardamom, star anise, bay leaf and cloves for 30 seconds then add in the cumin seeds and let them splutter.
Add in 1 onion and saute well followed by ½ tsp ginger-garlic paste.
Add the marinated soya chunks and vegetables to the cooker and evenly spread into one layer.
Add 1½ cup of basmati rice (soaked for 20 minutes) and spread evenly over marinated soya chunks.
Sprinkle ¾ tsp salt, 3 tbsp fried onions, ½ tsp biryani masala powder, and 1 tsp ghee.
Pour 2¼ cup of water around the side of the rice and mixture.
Cover and pressure cook for 2 whistles on medium flame. As for the Instant Pot cook for 10 minutes on manual. Let it sit for 5 minutes once cooked.
Open the lid once the steam has dissipated and garnish with chopped cilantro, fried onions and a spritz of lime.
Serve the soya biryani along raita or even just by itself!
This does look super tasty! I became a vegetarian at the beginning of the year so I am always looking for new recipes. Definitely gonna be trying it out!
