Lately, I have been posting a lot of meat dishes so today I decided that I would post a vegetarian recipe that will keep you coming back for more! My Soya Chunks Biryani is perfect for a weeknight dinner and if you do not want the soya chunks in the dish can be made withoutSoya Chunks Briyani them and it still tastes amazing! For those of you who aren’t familiar with Soya Chunks, they are just like TVP as well as high in protein and isoflavonoids. This is a dish that is on heavy rotation at my house because it can be changed in so many ways and still taste great. Feel free to add any vegetables you like. Hope you enjoy it!

Marinade

  • 1 cup Soya Chunks
  • 1 cup Yogurt I use Stonyfield Greek Yogurt
  • ¼ tsp Turmeric Powder
  • 1 tsp Red Chili Powder Adjust according to your taste
  • ½ tsp Ginger-Garlic Paste
  • 1 tbsp Shan Biryani Masala Powder OPTIONAL but Recommended
  • ½ tsp Salt
  • ½ Carrot Diced
  • 1 Potato Cubed
  • ½ Yellow Onion Diced

Biryani Ingredients

  • 2 tbsp + 1 extra tsp ghee on the side
  • 1 Bay Leaf
  • 1 inch Cinnamon Stick
  • 5 Cloves
  • 1 Star Anise
  • 4 Cardamom Pods
  • ½ tsp White Pepper Powder
  • 1 tsp Cumin Seeds
  • 1 Yellow Onion Finely Chopped
  • ½ tsp Ginger-Garlic Paste
  • cup Basmati Rice-Soaked
  • ¾ tsp Salt Adjust according to your taste
  • 3 tbsp Fried Onions Optional
  • ½ tsp Shan Biryani Masala Powder
  • 3 tbsp Coriander Finely Chopped
  • cup Warm Water

  • Marinate vegetables and soya chunks in yogurt along with all the dry spices.
  • In a Pressure cooker or Instant Pot heat up 2tbsp ghee and add in cinnamon, cardamom, star anise, bay leaf and cloves for 30 seconds then add in the cumin seeds and let them splutter.
  • Add in 1 onion and saute well followed by ½ tsp ginger-garlic paste.
  • Add the marinated soya chunks and vegetables to the cooker and evenly spread into one layer.
  • Add 1½ cup of basmati rice (soaked for 20 minutes) and spread evenly over marinated soya chunks.
  • Sprinkle ¾ tsp salt, 3 tbsp fried onions, ½ tsp biryani masala powder, and 1 tsp ghee.
  • Pour 2¼ cup of water around the side of the rice and mixture.
  • Cover and pressure cook for 2 whistles on medium flame. As for the Instant Pot cook for 10 minutes on manual. Let it sit for 5 minutes once cooked.
  • Open the lid once the steam has dissipated and garnish with chopped cilantro, fried onions and a spritz of lime.
  • Serve the soya biryani along raita or even just by itself!
