Creamy Cajun Pasta is one of my all-time favorite dishes to whip up. This dish is so creamy and scrumptious that you’ll be licking your plate clean! My whole family loves it and I often bring it to potlucks. The key to getting the sauce perfect is to whisk, whisk, whisk. I like my food on the spicier side so I always add extra seasoning and red pepper flakes but you season it the way you want. Last but not least if you would like to bulk up the dish feel free to add in chicken or shrimp! I have used both chicken and shrimp in this dish and both taste amazing with it, I do marinate the protein beforehand using some EVOO and Cajun Seasoning and cook it separately before adding it in. Creamy Cajun Pasta
Ingredients
INGREDIENTS:
- 1 tablespoon EVOO
- 2 tablespoons cajun seasoning adjust per your taste
- 8 ounces of pasta of your choice. I used Rigatoni
- 2 tablespoons unsalted butter
- 3 cloves garlic minced
- 1 cup heavy cream or more, to taste
- 1.4 teaspoon of Italian Seasoning
- 1 cup chopped bell peppers
- 1/2 teaspoon lemon zest optional
- 1 cup freshly grated Parmesan add more if you like it cheesier
- Kosher salt and freshly ground black pepper to taste
- 1.5 cups Tomatoes diced, I used cherry tomatoes.
- 1/2 tablespoon chopped dried parsley leaves or 2 tbsp freshly chopped parsley leaves.
Instructions
DIRECTIONS:
- In a large pot of boiling salted water, cook pasta according to package instructions; drain well.
- Melt butter in a saucepan over medium heat. Add garlic and onions. Cook stirring frequently, until fragrant, about 1-2 minutes.
- Add in bell peppers and tomatoes. Saute for a minute or two.
- Add in cajun seasoning and Italian seasoning. Stir for a few seconds, be sure to not let the spices burn.
- Gradually whisk in heavy cream and lemon zest. Cook, whisking constantly until incorporated, about 1-2 minutes. Stir in Parmesan until slightly thickened, about 1-2 minutes. If the mixture is too thick, add more heavy cream as needed; season with salt and pepper, to taste.
- Stir in pasta and gently toss to combine.
- Serve immediately. You can add any protein of your choice to this, I tend to add chicken or shrimp to it depending on what I have on hand. It tastes great on its own as well. It tastes even better the next day! Enjoy!
