I love making this Spicy Southwestern Corn Salad all year round, it makes enough to feed plenty of people, which is always a plus and it can make a great side dish or appetizer if served with chips. If I’m feeling like something heavier then I just add cheese and melt it all up in the microwave! It’s also great to put on tacos, quesadillas, or in enchiladas!
