Today I decided to whip up my FAMOUS Grilled Mango-Chipotle Chicken Pinchos! Pinchos are basically Spanish style meat skewers. I make these for our backyard bbq’s, picnics, and simple spring/summer dinners often. In the winter I grill them inside on my indoor grill. Regardless of the season, they are always a hit and my family and friends keep coming back for more. I hope you enjoy them as much as we do!
The weather here is finally getting warmer and I’m so excited to finally get to grill again! I use Mazola® Corn Oil for all of my grilling marinades because Mazola has a high smoke point (450˚ F), great for grilling and stir-frying at high temperatures.
Grilled Mango Chipotle Chicken Pinchos
Delicious and light pinchos to tantalize your taste buds.

Marinating Time: 1440m
Servings: 4 People
Ingredients:
- 1.5 Cups Mango Peeled and Pitted(Cubed) If you cannot find fresh mango, feel free to use canned, frozen or pulp but make sure to only use 1 cup if doing so.
- 2 Tbsp Apple Cider Vinegar You can easily substitute with white vinegar or red wine vinegar.
- 1.5 Tbsp Mazola Corn Oil
- 1 Tbsp Cayenne Pepper
- 2 Chipotle peppers in Adobo Sauce Reserve 1.5 tbsp of the Chipotle Sauce that the peppers come in. The rest you can out in an air- tight container and freeze.
- 4 Garlic Cloves Smashed and peeled.
- 3/4 Fresh Cilantro Roughly Chopped
- 2 Tsp Adobo Seasoning Optional but I highly recommend it!
- Salt to taste
- 1 Tsp Freshly Cracked Black Pepper
- 2 Pounds Boneless Skinless Chicken Breast or Thighs Cut Into Cubes
Directions
1) Place mango, cilantro, vinegar, Mazola Corn Oil, garlic, chipotle, salt and pepper and adobo seasoning in a food processor and puree until smooth. Adjust seasonings to taste.
2) Add the chicken cubes with half of the chipotle-mango sauce into a resealable plastic bag, and massage to coat the chicken with the sauce. Refrigerate at least 2-4 hours to marinate but I prefer marinating it overnight. If you are able to I HIGHLY recommend marinating it overnight.
3) Put the other half of the chipotle-mango sauce into a small saucepan and simmer over low heat until thick, stirring often, about 15 minutes. Set some of the simmered sauce aside to serve on the side, and baste the chicken every few minutes with the rest of the sauce.
4) Soak your wooden skewers in warm water 2-3 hours before grilling your chicken. If using metal skewers please disregard.
5) Remove the marinated chicken from the fridge and let it come to room temp. Skewer it onto soaked wooden skewers or metal skewers.
6) Preheat a grill or grill pan to medium-high heat and brush with Mazola Corn Oil. Place skewered chicken onto the grill.
7) Grill the chicken, turning and basting about every 5 minutes, until cooked through, about 15 minutes. Make sure to baste the chicken with you cooked sauce, don’t forget do not to use it all so you have enough for dipping!
Transfer to tray or serving platter and serve with the reserved chipotle-mango sauce.
NOTES:
I highly recommend you marinating the chicken overnight.
Have fun with your skewers by adding mushrooms, onions and/or bell peppers to liven them up even more!
